Docker image for Polynote, Scala and SparkNLP

I have posted a docker image which provides the latest version of Polynote and Scala, and which has been tested with SparkNLP-3.0.0. In my research (details here), I use Polynote with ScalaNLP to do proof of concept text analytics (on reflective writing), and as the analytics stabilise I roll the code into a library which can then be used as a dependency in future notebooks, minimising repetition.
