Hello, my friends, how are you?

One hour ago I had to "reset" my Windows 10 and reinstall Openboard.
I made a copy of the "document" folder before with all my charts (lots of them, really) which is in my Onedrive.

What happens is that I don't know WHERE to paste it. I have already checked "users" folder and also Openboard folder and I don't
find any "document" folder so I can overwrite it. Could you please tell me the path to get there?

The document folder is where your OpenBoardUser.config is. See https://github.com/OpenBoard-org/OpenBoard/wiki/Configuration#configuration-files-location.

For Windows, this is %USERPROFILE%\AppData\Local\OpenBoard\document - if you have not changed the path by an entry for App/DataDirectory in the system wide OpenBoard.config file.
