Aucune politique de redémarrage automatique n'est configurée dans le compose (https://github.com/compose-spec/compose-spec/blob/master/spec.md#restart).

Si le serveur redémarre pour une quelconque raison, les services ne sont pas redémarrés.

A minima, je dirai qu'il faudrait la configurer à unless-stopped?
