I'd like to hear more options, built-in to DEX or leave it to hooks?

I don't think uniswap is trying to use AMM as a source of liquidity for complex payments. Now no rule says XRPL has to do that. But then AMM wouldn't be integrated with XRPL's payment features and that would be a bit sad.

the EVM blockchain already implement these kind payment, like path payment, across AMM liquidity pools.
