Replace fastjson with jackson

[damccorm]

fastjson is only used by Beam SQL, we should switch to jackson to match the rest of Beam and reduce our dependency update responsibilities.

This is an actual issue, at least once we've hit a security vulnerability we weren't tracking: #11758
