Add Proposed Project Ideas to Mentorship Directory

We have several great project ideas from the discussion here: https://github.com/orgs/asyncapi/discussions/1361. These need to be added to the mentorship directory in this repo: https://github.com/asyncapi/community/tree/master/mentorship/asyncapi-mentorship, following the same format we used in previous years.

Hi, I wanted to work on this and clarify some things :-

1. The table in readme.md would have the mentee/s column as empty right now? and the status will be in progress?
2. The readme.md will cover all the accepted project and projects.md will be documenting all ideas proposed.
   Do let me know if I am in the right direction. I am new to this community.
