Let's use a non-google option that doesn't contribute to user surveillance

There are other options available, and I don't see this as a blocker.

Ah, sure thing. No problem — we'd seen GA raised a way back as the suggested platform.

Happy to go with an alternative 🙂 Have seen some privacy-focused sites use Fathom too, though it's a paid service ($14/m).
