Improve config validation

Problem:

• In some cases error messages like the following are logged:

geniusyield-orderbot-exe: user error (Error in $: endOfInput at '{coreProvider:{socketPath:cardanonodesocket,kupoUrl:http:KUPO_IP_REPLACED:1442},')

This is not particularly useful. It would be nice to have more user friendly error messages helping the user to find the actual issue. This is really cryptic and it would be nice if we could improve the error messages and add some config validation on startup with user friendly error messages.
