I need to create a virtual device on a physical Android phone, with version 7, so that the Android connects to it, the device's Android is already compiled and I have no way to change it, is it possible to do this?

That won't be possible unfortunately; at least without changing some of the vendor partition.
With the compiled Android image I will assume that Bluetooth is using the physical BT controller on the phone,
RootCanal cannot attach itself in this configuration.
