Pumpkin Bread |
- 230 g (1.75 cup) flour
- 1 tsp baking soda
- 0.5 tsp baking powder
- 0.75 tsp salt
- 1 tsp ginger
- 1 tsp allspice
- 1 tsp cinnamon
- 0.25 tsp nutmeg
- 2 eggs
- 190 g (1- cup) sugar
- 90 g (0.5 cup) brown sugar
- 1/2 tsp vanilla extract
- 1/3 cup canola oil
- 1 can (15 oz) pumpkin
Preheat an oven to 325°F.
Sift the flour, baking soda, baking powder, salt, and spices into a bowl.
In a large bowl, whip the eggs. Add the sugars and mix. Continue to mix while slowly drizzling in the canola oil. Add the pumpkin and mix.
Add the dry mixture on top of the wet and stir just until combined. Pour into a lightly-greased bread pan, and bake for approximately 55 minutes.
