Can laragon run php project with specific version of php for each project

As far as I know, no, but you can switch PHP versions easily

Laragon installs PHP globally (within Laragon environment). you can't have different versions of PHP for each project

You can have several PHP versions installed, but you can use only one version at a time.
So, yes. But you'll have to switch to the correct PHP version before start each project.

As already spoken, not directly with a config file, is not an hard work but you need to switch the php versione each time!

I had to rewrite a php 5 project, at the end I run doker for the old version.
It's fast to switch the php version but when you need to make lot's of test in each two the project you can lost lot's of time
