Rename config.h to config-sample.h?

Hi,
can we maybe rename the config.h to config-sample.h and only the config-sample.h ist part of the git repository.
Then anybody can copy it locally to config.h and change the settings without changing the sample file.
I think this can help especially if you want to add new values to the config file as contributor or if you forked the project.

I think this is a good idea. I will do that.

Maybe we should do the same for the platformio.ini, because the used environment is depending on the board you use.
In my case I have a M5Stack Atom Lite and have to use board=m5stackatom.
