I plan to set up a virtual math school and record courses. The presentations will be created using Metropolis. Do I have to make these lessons available under a CC license? I don't know how to understand the sentence: "This does not affect the presentation that you create with the theme.".

A bit late to the party, but here is what it means.
If you use the theme as-it-is for a presentation, then the presentation should not be under some particular license.
If you change the theme (i.e. edit the .dtxor .styfiles in any way), and make the presentation, the presentation should still not be under some particular license. BUT:
if you DO share your modified theme with others, the modified theme should be under CC-BY-SA 4.0
if DO NOT share your modified theme and keep it for yourself, then you have nothing to do
