Is it possible to validate with Akash?
If so could a guide be provided?

I'd recommend sentries on akash, validators elsewhere-- but it is totally possible

and I want to move some infra to akash, so why not?

Sentries on Akash, sorry.

Validators should maintain control over their keys to a greater degree than is possible on akash.
