Fix all version examples to 1.0.0. #35

Go through the documentation and search for text where a certain version number is mentioned, e.g.

Releases should move the minor version 1.50.0 -> 1.51.0
Hotfixes should move the patch version so 1.50.0 -> 1.50.1

To make maintaining the documentation easier in the future, change all version numbers in examples to 1.0.0. Meaning in this case:

Releases should move the minor version 1.0.0 -> 1.0.1
Hotfixes should move the patch version so 1.0.0 -> 1.0.1
