I'd like there was the option to disable WebRTC

ATM Zen is still in Alpha; & less than 2 months old at that Maybe wait until it is fully released, since many of Chrome/Firefox forks tend to die off before becoming mature?

I'd still like to know what the security profile looks like.

I don't think Zen introduces any privacy or security features of its own (it seems to be more UI/UX focused).

The privacy features are inherited from upstream Firefox, and the default configuration is based on 'betterfox' a custom user.js template for Firefox.
