For tray used icon name:
https://github.com/raspberrypi-ui/lxplug-bluetooth/blob/master/plugins/bluetooth/bluetooth.c#L302
preferences-system-bluetooth But it's Category icon and can not be monochromed for tray, because used on mostly System Settings.
Will be good use another name, for example:

  • preferences-system-bluetooth-tray
  • preferences-system-bluetooth-panel

and etc...
