Do dash conversion to dot for YAML option in knitr directly (only in Quarto for now)

This follows a discussion in quarto-dev/quarto-cli#4120

Quarto does accept knitr option with - instead of ., and do convert for knitr.

Supporting directly in knitr would allow more symetric usage for YAML in Rmd.

However, it could be confusing to accept both, and have some dash name in YAML and dot name in chunk header.

Just opening to thing about it and track interest
