Proposed feature

#76 sets all strings as text entry fields. For fields that have a controlled vocabulary, convert those fields from TextEntry fields to Selector fields

Alternatives

Radio buttons or checkboxes as appropriate

Additional context

We need to know what the valid options are to know which fields should not be free text and to populate these fields
