At the moment, the Gravity setting sessions is "overridden" with interactivetools_map if configured in the Galaxy settings.

A new Galaxy setting interactivetoolsproxy_map was added in galaxyproject/galaxy#18481 that overrides interactivetools_map` if defined. Gravity should do the same. This PR also documents the change.

A new Galaxy setting `interactivetools_map_sqlalchemy` was added in Galaxy PR #18481 that overrides interactivetools_map` if defined. Gravity should do the same. This commit also documents the change.

@natefoo All the required functionality has now been merged to Galaxy (galaxyproject/galaxy#18481), the Interactive Tools Proxy (galaxyproject/gx-it-proxy#21, galaxyproject/gx-it-proxy#22) and an updated tutorial to the GTN (galaxyproject/training-material#5179) is also ready to be merged, it would now make sense to merge this.
