Makes the following changes:

In the HelmRelease.yaml file:
- Updated the version to "1.0.0-1" from "2.0.0".
In the spoke-k8s_cluster.tf file:
- Changed the Kubernetes version to "1.27" from "1.29".
- Increased the maximum number of pods to "75" from "50".

These changes aim to align the project components with the required versions and configurations, ensuring compatibility and optimal performance.
