Fix audio transcoding flow

Transcode the default audio stream, (the first audio if no audio stream is set)
The new stream is always stream zero and marked as the default
Added audio disposition flags when adding audio codec
Split Video Options into 3 pages
New Dialog to allow users to experiment with quality targets
Show HDR information for media
