Fixes #87

This PR does three unrelated things:

  • refactors a lot of the code for fitting power-laws to EM distributions in many pixels
  • Updates package infrastructure to use more modern tooling (e.g. only pyproject.tml)
  • Update docs with new theme and a few other minor formatting fixes
